Vanilla Rainbow Cake Cubes with Buttercream Frosting
Perfect for a colourful addition to any high tea or party!

Ingredients
Rainbow cake
1 packet of golden buttercake cake mix for a 20 cm x 10 cm pan
(For a 30 cm x 20cm pan, use 2 packets of cake mix)
2 eggs
2/3 cup milk
3 tablespoons butter or margarine depending on the packet instructions
Food colouring
Buttercream frosting
125g butter
1 ½ cups icing sugar
1 tablespoon milk
Method
Use an electric mixer to make the buttercake and ingredients (butter, milk, egg) according to the packet instructions.
Divide the batter into 6 smaller bowls.
Add food colouring and mix to make batter of different colours.
Using two colours, spread rows of batter across a 20 x 10 cm baking pan. This will make the first layer of colours! Purple and green are at the bottom here.
Choose another two colours, and spread another layer of rows over the top. I used blue and yellow for the middle layer.
Use the final two colours to make the final layer of coloured batter. Orange and red will be the top here!
Bake according to packet instructions, or until lightly golden and a skewer comes out clean when stuck in to test the cake.
Once cooked, set the cake aside to cool for about 10 minutes. Remove the cake from its tray. Let it cool completely
Make the buttercream frosting - combine butter, icing sugar, and a bit of milk. Mix with an electric mixer until the frosting is creamy and smooth.
Once the cake has cooled completely, pipe frosting dollops on top.
Carefully chop up the cake into cubes.
Serve. Or keep the rainbow cubes in an airtight container in the fridge for later (up to 3 days).
