Vanilla YoYos
Yo-yos are custard biscuits with a creamy vanilla centre, originating in South Australia before taking on the world! They’re quick and easy to make for a fun treat. And they can be made in multiple sizes, for a full-sized biscuit or a cute mini snack.

Makes: 12-24 servings
Ingredients
To make biscuits
170g softened butter
1/3 cup icing sugar
55g custard powder
170g plain flour
To make filling
1/2 cup icing sugar
1/4 cup softened butter
1 teaspoon vanilla essence
Method
Preheat oven to 180c. Grease baking trays
In a bowl, cream butter and icing sugar together.
Add custard powder and flour and mix together. Make sure to scrape all the icing sugar, custard powder and flour in from the sides.
Roll the dough into small balls in the desired shape and size. The batter doesn’t melt in the oven, so the size balls you roll out is the size of the baked biscuit. Place the balls on prepared trays.
Press down using a fork.
Bake for about 20 minutes.
Set aside to cool.
To make filling.
Combine butter with icing sugar and vanilla essence.
Mix until smooth.
On a cooled biscuit, spread a layer of icing filling and join to another un-iced biscuit.
Allow to set and enjoy.
