Vegan & Gluten Free Superfood Stew

Superfood Stew coming through! This is my sister's aduki bean and vegan chorizo sausage stew. We all love this meal in our family, it's healthy and hearty, and of course gluten free.

Preparation Time: Overnight
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
1 Cup of aduki beans
1 Tbsp desiccated coconut
3 Garlic cloves
1 Tsp sweet paprika
4 Eggs
1 Cauliflower head
1 Cabbage
5 Sprigs of purple sprouting broccoli
Vegan chorizo

Method
Soak the aduki beans overnight, no less than 8 hours



Aduki beans


Once soaked wash in a sieve and transfer to a saucepan of a pint of water. This may seem like a lot, but they soak it up. Leave to boil for 10 minutes, then turn to a simmer for 30 minutes and cover.



Chop the vegetables and put in a saucepan of boiling water for 10 minutes.



Purple sprouting broccoli


Finely chop the garlic and fry in a little olive oil until softened. Chop the sausage and add until it colours nicely either side. Turn the heat down to a low heat and add the aduki beans. Stir and leave to cook for 5 minutes.



Add the paprika and dessicated coconut. Stir and cover for another 5 minutes

While the stew is cooking fry/boil/poach the eggs

Drain the boiled vegetables and start plating up!



A superfood overnight dish that's super tasty, full of protein, but still nutritionally balanced.
