Ingredients 1 Cup of aduki beans
1 Tbsp desiccated coconut
3 Garlic cloves
1 Tsp sweet paprika
1 Cauliflower head
5 Sprigs of purple sprouting broccoli
Soak the aduki beans overnight, no less than 8 hours
Once soaked wash in a sieve and transfer to a saucepan of a pint of water. This may seem like a lot, but they soak it up. Leave to boil for 10 minutes, then turn to a simmer for 30 minutes and cover.
Chop the vegetables and put in a saucepan of boiling water for 10 minutes.
Finely chop the garlic and fry in a little olive oil until softened. Chop the sausage and add until it colours nicely either side. Turn the heat down to a low heat and add the aduki beans. Stir and leave to cook for 5 minutes.
Add the paprika and dessicated coconut. Stir and cover for another 5 minutes
While the stew is cooking fry/boil/poach the eggs
Drain the boiled vegetables and start plating up!
