Vegan Big Breakfast
A hearty breakfast for those living cruelty free. I have kept this breakfast quite healthy with a tofu scramble and sauteed veg but add in hash browns, avocado or vegetarian sausages to go full English!

Serves: 2
Ingredients
For the Scramble
1/2 block of firm tofu
1/4 cup of vegetable stock
1/2 tsp tumeric
1/2 tsp garlic powder
1/4 tsp chilli powder
1/2 tsp basil
Salt and Pepper to taste
For the rest
4 slices of toast
1 punnet of cherry tomatoes
2 handfuls of spinach
1 cup of sliced mushrooms
1 tsp olive oil
Salt and pepper to taste
Black coffee to serve
Method
First off make your tofu scramble. To do this simply break the tofu into small pieces with your hands until it reaches the size and consistency of scrambled eggs. Add to a hot pan with the stock and bring to a high heat. Add in the spices and stir. Lower the heat and stir occasionally until the rest of your breakfast is ready.
Add the oil to a fry pan and turn onto a high heat. Toss in the sliced mushrooms and stir for a few minutes. Once they start to brown add in the tomatoes and finally the spinach. Season to taste and turn the heat right down.
Put on your coffee and toast!
Once the toast is cooked the rest of your vegan big breakfast will be ready as well. Simply pile onto your plate and enjoy a hearty, healthy and ethical breakfast.
