Vegan 'Chocolate Chip' Ice Cream

You only need three ingredients to make this vegan ice cream, and a food processor or a hand held blender.

Preparation Time: Overnight
Cooking Time: 0 minutes
Makes: 1 serving

1 Tblsp Raw Cacao Nibs
2 Tblsp Manuka Honey
2 Bananas

Place the bananas in the freezer for at least eight hours, or overnight.

Remove the skin from the bananas and add to a food processor along with a few raw nibs.

Blend for 30 seconds, then scrape down the sides with a spoon.

Add the honey and cacao nibs to a small pot and microwave for 35 seconds.

Pour the melted honey mixture into the food processor, whilst running.

Blend until smooth.

Serve the 'ice cream' immediately using an ice cream scoop for prettiness.

Voila! Ice cream studded with raw cacao nibs without refined sugar, gluten or dairy.
