Vegan Chocolate Chip Ice Cream

You only need three ingredients to make this vegan ice cream, and a food processor or a hand held blender.



Preparation Time: Overnight
Cooking Time: 0 minutes
Makes: 1 serving

Ingredients
1 Tblsp Raw Cacao Nibs
2 Tblsp Manuka Honey
2 Bananas



Method
  • Place the bananas in the freezer for at least eight hours, or overnight.

  • Remove the skin from the bananas and add to a food processor along with a few raw nibs.



  • Blend for 30 seconds, then scrape down the sides with a spoon.

  • Add the honey and cacao nibs to a small pot and microwave for 35 seconds.



  • Pour the melted honey mixture into the food processor, whilst running.

  • Blend until smooth.



  • Serve the 'ice cream' immediately using an ice cream scoop for prettiness.

  • Voila! Ice cream studded with raw cacao nibs without refined sugar, gluten or dairy.
