Vegan Chocolate Mud Cake

This dense mud cake is dairy and sugar free, low in saturated fat, paleo, vegan and delicious. A deceptively healthy cake at its best. With less then 200 cal per slice this cake is the perfect treat in between meals or even for breakfast.

Preparation Time: 10 minutes
Cooking Time: 35-50 minutes
Makes: 12 servings

Chia ‘egg’ Ingredients:
1 tbls chia seeds
3 tbls water
In a mortar and pestle or in a food processor grind the chia seeds to burst the ‘shell’ and mix with the water to make a gel.

Cake Ingredients:
1 chia ‘egg’
3 tbls cacao powder
1 1/4 cup self raising flour
1 tsp baking powder
2 ripe bananas
1/3 cup olive oil
1/3 cup rice malt syrup
2/3 cup almond milk
1 tbls apple cider vinegar

Icing Ingredients:
2 tbsp icing sugar
2 tbsp cacao
1 tbsp olive oil
Dash of almond milk

In a blender blitz the banana, olive oil, chia ‘egg’, almond milk and rice malt syrup until it is light and foamy.

In a bowl add the flour, cacao, baking powder and apple cider vinegar. Pour the apple cider vinegar right on the baking powder and watch it foam! Mix the wet ingredients with the dry.

Pour the mix into a greased 20cm cake tin.

Bake in a moderate oven (180C/320F). Check at the 30 minute mark. If the centre is soft continue to bake.

Once cooked through allow the cake to stand in the tin for 5 minutes before turning out onto a cake rack.

Either dust with cacao and enjoy warm or allow to cool and ice.

For the icing simply combine the ingredients until you have a smooth paste and spread on the cool cake. Dust with cacao and enjoy!

This cake can easily be made non vegan by using a regular egg instead of chia, cow milk, butter instead of oil and milk chocolate instead of cacao.

hi, can i substitute the rice malt syrup?
'Sugar free'? I think it's got icing sugar in it :(

Hello, Yes there is a little bit of sugar in the icing but not in the cake! Adjust the icing as desired.
