Chocolate peanut butter is a much loved treat from my childhood. For a dairy free alternative I've recently created an easy to follow, vegan recipe.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 1 x 300g jar
Ingredients
250g peanuts skin on
10 almonds
1 tblsp coconut oil
3 tblsp cacao nibs
50g honey

Method
Place the nuts on a baking tray and place in the oven.
Put the cacao nibs in a mug/jar with the coconut oil and place in the microwave for 2 minutes, removing after 1 minute to stir.
The nibs will not have melted as such, but will be in a more pliable state.
Remove the nuts from the oven.
Add the honey whilst the processor is running.
Place nuts in a food processor and blitz to a medium size dust (this takes about 1 minute).
Scrape down the sides using a spoon and turn on the food processor again.
Add the almost-melted cacao nibs while the nuts blitz for a second time.
The peanut butter will come together and produce a thick, chocolatey, more natural, spread.
