Vegan Ecuadorian Hot Chocolate

I love healthy versions of my all-time favourite indulgences. This is a delicious, dairy-free, sugar-alternative version, of a classic hot chocolate, with an added spicy kick, giving it that extra edge.

Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
50ml coconut milk
25g cacao, 80% dark chocolate
3 tbsp coconut sugar
A dried chilli



Method
Add the sugar and coconut to a saucepan and cook over a low heat for 10 minutes.



Grate the chocolate into a dish.

After 3 minutes check the simmering sugar and coconut, it should be thickening slowly.



Add the chocolate and chilli to the milk and simmer for the rest of 5 minutes.

Remove the chilli and pour the remaining mixture into a mug and serve.



This is a truly indulgent, delicious coconut and chocolate take on the classic hot chocolate, with a spiced twist. Enjoy.
