Vegan Fried Rice
Fried rice is liked by many people and it is a good accompaniment for so many meals.
This one is vegan although I am not a vegan, I thought I would try it.
Make sure you get a firm tofu for this, and you can use any sort of rice.

Preparation Time: 15 minutes plus overnight marinade
Cooking Time: 50 minutes
Serves: 2 as a main
Ingredients
2 cups cold cooked rice
About 75 g tofu
Hoisin sauce
Powdered chicken style stock (Massell)
½ carrot, diced
1 cup bean shoots
Spring onion, chopped
Method
Marinate the tofu in a little Hoisin sauce and keep overnight or at least several hours.
Bake it in one piece, and when it is cool, dice it.
Stir fry the carrot about 5 - 10 minutes.
Add the peas, spring onion and bean shoots to the pan.
Stir fry until it is cooked slightly but still firm.
Add the tofu and mix through.
Add the cold rice and a tsp of the stock powder, and stir to combine all ingredients.
Continue stirring until the rice if heated through.
Garnish with some spring onion - optional, and eat with chili sauce - optional.
