Coelic sufferers and vegans rejoice: here are gluten free oats and apple bites, which are the perfect light snack, quick breakfast, or guilt-free dessert.

Ingredients
25g gluten-free oats
2 granny smith/cooking apples
Half tsp cinnamon
Tsp freshly-ground nutmeg
50ml sunflower oil
50g agave syrup
Tbslp coconut oil (for greasing)

Method
Line a baking tray with baking paper and grease with coconut oil.
Peel and grate the apples into a bowl.
Squeeze over the sugar and add the oil.
Add the spices and combine.
If you can, try to use fresh nutmeg because it adds such a bite that the readily-ground powdered stuff can't compete with.
Add the oats to the bowl and gentle combine.
Using a spoon sculpt the mixture into 50 pence sized balls and place on the coconut-greased sheet.
Remove from the oven and serve immediately.
These work well as a vegan snack, dessert, or quick breakfast bite, and keep for 1 week in the fridge.
