Vegan Pumpkin Brownies

Move over sweet potato and black bean brownie - pumpkin brownies are now my favourite. This recipe has no flour, little sugar, no oil and is so delicious that even my pumpkin-hating boyfriend LOVED them.

Preparation Time: 10 minutes
Cooking Time: 20-25 minutes
Serves: 8

Ingredients
For the Brownie
1 1/4 cup steamed pumpkin (300g)
2/3 cup nut butter
1/3 cup cocoa powder
3 tbsp chocolate protein powder (or additional cocoa powder)
1 tsp pure vanilla extract
1/4 tsp salt
1/4 ts cinnamon
1/4 cup sugar
Handful of walnuts

For the icing
3 tbsp of pb2
1 tbsp cacao powder
2 tsp of icing sugar
2 tbsp soy milk
8 Walnuts to top

Method
  • Preheat oven to 160 C (325 F).

  • Line an 8-inch pan with baking paper.
  • Combine all ingredients in a food processor until smooth, and spread into the prepared pan.
  • Bake on the centre rack 20-25 minutes (20 for extra fudgy brownies)

  • For the icing, I mixed icing sugar, cacao and pb2 with soy milk until it tasted good and was a thick consistency. Top with walnuts.
