Vegan Purple Berry Ice Cream

Purple 'ice cream' is in fact a happy mistake. I had intended to make berry flavoured banana ice cream, but once I added the berries it turned into a purple bowl of joy. Kids love this ice cream, and it's the perfect way to get them to eat more fruit.



Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 10 servings

Ingredients
Tblsp golden icing sugar
5 frozen bananas
1 punnet blackberries

Method
  • Remove the skin of the frozen bananas using a knife and chop roughly.



  • Add the bananas to a blender and blitz to a chunky texture.



  • Turn off the food processor, add all of the berries and blitz again.



  • Scrape down the sides if neccesary, otherwise add 1 tblsp of icing sugar and blend again for 20 seconds.



  • Turn off the food processor and begin to scoop out the purple 'ice cream'.



  • Dust with the icing sugar.



  • Serve generously in ramekins.



  • This ice cream can be kept in the freezer for up to a week, and is the ideal dessert to serve at kids parties that is even a treat for those with intolerences.
