Vegan Sour Cream

This sour cream is thick, beautifully tangy, and won't leave you feeling sick afterwards. It is simple to make and can accompany hundreds of dishes.

This recipe is dairy free but won't leave you missing out. My boyfriend who is not vegan said it tasted better than regular sour cream!



Preparation Time: 65 minutes
Cooking Time: 0 minutes
Makes: 1 large bowl

Ingredients
1 cup raw cashews
1/2 c water
2 tsp apple cider vinegar
1 tsp lemon juice
1/8 tsp sea salt


Method
  • Place the cashews in a bowl with the water and leave to soak for at least one hour.

  • Once soaked add nuts to a blender with the remaining ingredients. Blend until you have a smooth consistency. Add more water as needed.

  • Pour into a bowl and place in the fridge to firm up.
