Vegemite Popcorn

Now I know Vegemite popcorn may sound a little weird but this tastes just like buttery Vegemite on toast. If you usually spread your Vegemite thickly, go for the full two teaspoons – or more if your really love the stuff. If not or you are a bit unsure about the whole thing, just go for the one teaspoon.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 1

Ingredients
1-2 tablespoons good quality oil
60 g popping corn
25 g plant based butter
1-2 teaspoons Vegemite

Method
  • Preheat the oven to 150ºC. Cover a baking tray with baking paper.
  • Pour the oil into a large pan over a medium-high heat.

  • Once the pan is hot, add the corn kernels and shake the pan gently to cover the kernels in oil and spread out.
  • Cover with a lid and leave on the heat, don't step away, gently shake the pan every 30 seconds as the corn pops. The popcorn is ready when the pops are about 2 to 3 seconds apart.
  • Tip the naked popcorn into a large bowl.

  • In a small pot melt the Vegemite and butter over a low heat until you have a smooth liquid. Pour the Vegemite mixture over the popcorn and stir well.

  • Spread the Vegemite popcorn over the lined baking tray and place in the oven for 3 to 4 minutes for it to crisp up. This step is not essential but gives the popcorn some crunch again.



  • Enjoy the salty and crunchy goodness alone with a movie or make a bigger batch to serve as a snack with beers at a party and see if people can guess the very Australian flavour.
