Now I know Vegemite popcorn may sound a little weird but this tastes just like buttery Vegemite on toast. If you usually spread your Vegemite thickly, go for the full two teaspoons or more if your really love the stuff. If not or you are a bit unsure about the whole thing, just go for the one teaspoon.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 1
Ingredients
1-2 tablespoons good quality oil
60 g popping corn
25 g plant based butter
1-2 teaspoons Vegemite
Method
Preheat the oven to 150ēC. Cover a baking tray with baking paper.
Pour the oil into a large pan over a medium-high heat.
Once the pan is hot, add the corn kernels and shake the pan gently to cover the kernels in oil and spread out.
Cover with a lid and leave on the heat, don't step away, gently shake the pan every 30 seconds as the corn pops. The popcorn is ready when the pops are about 2 to 3 seconds apart.
Tip the naked popcorn into a large bowl.
In a small pot melt the Vegemite and butter over a low heat until you have a smooth liquid. Pour the Vegemite mixture over the popcorn and stir well.
Spread the Vegemite popcorn over the lined baking tray and place in the oven for 3 to 4 minutes for it to crisp up. This step is not essential but gives the popcorn some crunch again.
Enjoy the salty and crunchy goodness alone with a movie or make a bigger batch to serve as a snack with beers at a party and see if people can guess the very Australian flavour.
