Vegetable And Kalamata Olive Pasta

This vegetable and kalamata olive pasta is delicious, easy to prepare and can be made low FODMAP, gluten and lactose free. The olives are delicious bursts of flavour in this pasta. Serve for lunch or dinner.

Preparation Time: 5 minutes
Cooking Time: 45 minutes
Serves: 4

Ingredients
400g spiral pasta (gluten free if required)
500g tomatoes, diced
2 cloves garlic, minced (exclude if low FODMAP)
2 1/2 tbsp dried oregano
2 tbsp dried basil
1/8 cup fresh basil, finely chopped
2 bay leaves
1 tbsp Worcestershire sauce (gluten free if required)
1 tbsp olive oil
Salt and cracked pepper, to taste
2 carrots, cubed
1 zucchini, cubed
1/2 medium sized eggplant, cubed
1/2 cup pitted kalamata olives, sliced (optional)
Fresh basil leaves, to serve
Grated cheese, to serve (lactose free if required)

Method
  • Heat 1 tbsp of olive oil in a frypan on high heat. Fry the garlic for 1 minute, until golden.
  • Add the tomatoes, bay leaves, oregano, fresh and dried basil and Worcestershire sauce. Stir for 1 minute to combine.
  • Reduce the frypan to medium heat and simmer for 4 minutes.

  • Add the eggplant and olives, stir to combine. Add salt and pepper to taste. Simmer the sauce for 30 minutes.
  • Cook the pasta for 1 minute less than the packet instructions in boiling salty water. Drain, reserving 1/4 cup of the pasta water and set aside.
  • While the pasta is cooking, stir the carrot into the sauce. Simmer for 4 minutes.

  • Add the zucchini to the sauce, stir and simmer for 2-3 minutes until just cooked.

  • Turn off the heat and remove the bay leaves. Add salt and pepper to taste, stir to combine. Add the reserved pasta water and the pasta to the sauce. Toss to combine.
  • Serve in bowls with grated cheese and fresh basil sprinkled on top.
