Vegetable and Rice Broth

This is a healthy and wholesome recipe that incorporate lots of fresh vegetables with wholegrain rice. You could make it even healthier by using low-salt vegetable stock.



Preparation Time: 20 minutes
Cooking Time: 1 hour
Makes: 4 servings

Ingredients
1 tbsp vegetable oil
2 onions
1 clove of garlic
3 carrots
5 or 6 mushrooms
2 potatoes
1 cup of wholegrain rice
1 litre of vegetable stock

Method
  • Heat the vegetable oil in a large pan.
  • Chop the onion and crush the garlic and sauté in the oil for 5 minutes.
  • Chop the mushrooms and add them to the onion and garlic. Continue to sauté for a few more minutes.



  • Meanwhile dice the carrots and then add them to the pan.
  • Peel and then dice the potatoes.



  • Make up a litre of vegetable stock and add it to the pan along with the potatoes and rice.



  • Simmer gently for an hour until vegetables are soft and the rice is cooked through.

  • You can season to taste with salt and pepper.
