Vegetable and Rice Broth
This is a healthy and wholesome recipe that incorporate lots of fresh vegetables with wholegrain rice. You could make it even healthier by using low-salt vegetable stock.
Preparation Time: 20 minutes
Cooking Time: 1 hour
Makes: 4 servings
Ingredients
1 tbsp vegetable oil
2 onions
1 clove of garlic
3 carrots
5 or 6 mushrooms
2 potatoes
1 cup of wholegrain rice
1 litre of vegetable stock
Method
Heat the vegetable oil in a large pan.
Chop the onion and crush the garlic and sauté in the oil for 5 minutes.
Chop the mushrooms and add them to the onion and garlic. Continue to sauté for a few more minutes.
Meanwhile dice the carrots and then add them to the pan.
Peel and then dice the potatoes.
Make up a litre of vegetable stock and add it to the pan along with the potatoes and rice.
Simmer gently for an hour until vegetables are soft and the rice is cooked through.
You can season to taste with salt and pepper.
