Vegetable Loaf with Soy Beans
This loaf took me a long time to create as I had bought some dried organic soy beans and they had to be soaked and cooked. Soaking takes overnight and cooking for 3 hours. This loaf is a great way to get a lot of vegetables into one meal.
The loaf ready to go into the oven
Preparation Time: 1/2 hour to 1 day (depending on wether the soy beans are canned or dried)
Cooking Time: 45 minutes
Makes: 6-8 slices
Ingredients
1 zucchini medium grated
2 medium carrots grated
1 medium onion diced
2 tablespoons of canned brown lentils drained and rinsed
1 & 3/4 cups of soy beans canned or dried (soak dried beans overnight and then cook for 3 hours)
1 teaspoon minced garlic
1 teaspoon smoky paprika
1/2 teaspoon of Moroccan spice
Pinch of salt
2 tablespoons self raising flour
1/4 cup oat flour
2 tablespoons of LSA
3 beaten eggs
1 cup of breadcrumbs
Sweet soy sauce for serving
Method
Preheat oven to 175 degrees Celsius
Once soy beans have been cooked drain and rinse
Cook onions in a fry pan in some olive oil for 1-2 minutes just to soften a little as adding in uncooked onions to the mix will mean they are still a it crunchy in the loaf when you're eating it.
Grate zucchini and squeeze it to remove excess moisture
Grate the carrots and add to the bowl with zucchini
Add in onion, garlic, soy beans, lentils, smoky paprika salt, and Moroccan spice mix through to combine
In another bowl add all other dry ingredients- self raising flour, LSA, oat flour and breadcrumbs, mix through then add to the zucchini mix and stir through
Add in beaten eggs and mix well
Line a loaf tin and spoon in the mixture
Bake for 45 minutes
After 45 minutes check withs a skewer it should come out clean
Leave loaf in the tin for ten minutes then lift out
Once slightly cooled you can slice it. If it's still really hot it will fall apart
Before serving I like a drizzle of sweet soy sauce over my piece of loaf
A slice of vegetable loaf. Now all it needs is a drizzle of sweet soy. Yum
