Vegetable Potato Cakes
Preparation Time: 15 minutes
Cooking Time: 3 - 9 minutes each
Makes: 10 servings
Ingredients
600g mash potato
10g spinach leaves
40g white mushrooms
70g sweetcorn
200g cheesy bread
2 eggs
1 ½ tbsp coconut oil
Method
Slice the mushrooms, and then stir into the mash potato, along with the spinach and sweetcorn.
Divide the mixture into ten flattish patties.
Beat the eggs with a fork.
Put the bread in a food processor and turn it into breadcrumbs.
Dip each patty in the egg.
Cover each patty in breadcrumbs.
Fry the potato cakes in coconut oil until golden brown on both sides. The first batch can take up to 8 - 9 minutes, but the second and third batch will crisp up a lot more quickly.
