Vegetable Rice Cutlets

This is an easy and healthy dish made with vegetables and rice. I had some rice left-over today. So I thought of preparing a healthy snack.

You can use any vegetable to make this cutlet. This will a nutritious snack and the left-over rice will not be wasted.

Preparation Time:10 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
2 cup cooked rice
1 potato (cooked and mashed)
1/4 cup chopped capsicum
1/4 cup grated carrot
1/4 cup beans chopped
1/4 cup onion chopped
2 tbsp ginger finely chopped
1 garlic clove
1 tsp chilli powder
1/4 tsp turmeric powder
1/8 tsp cumin seed
2 tbsp corn flour
Salt to taste
Curry leaves
Oil for frying

Method
  • Put cooked rice in a bowl.
  • Add the chopped capsicum, beans, onion, mashed potato, grated carrot, curry leaves, ginger and garlic to the bowl.

  • Then add the cumin seed, corn flour, chilli powder, turmeric powder and salt to the bowl and mix well.

  • Crush the vegetable rice mix in a blender. Don't make it a fine paste.

  • Let it sit for 5 minutes. Heat oil in a pan. Add a spoonful of batter into the hot oil. Fry over medium flame until both sides are golden brown.

  • Move the cutlets into a tissue paper to remove excess oil.

  • Serve warm with sauce.
