Vegetable Rice Cutlets
This is an easy and healthy dish made with vegetables and rice. I had some rice left-over today. So I thought of preparing a healthy snack.
You can use any vegetable to make this cutlet. This will a nutritious snack and the left-over rice will not be wasted.
Preparation Time:10 minutes
Cooking Time: 15 minutes
Makes: 4 servings
Ingredients
2 cup cooked rice
1 potato (cooked and mashed)
1/4 cup chopped capsicum
1/4 cup grated carrot
1/4 cup beans chopped
1/4 cup onion chopped
2 tbsp ginger finely chopped
1 garlic clove
1 tsp chilli powder
1/4 tsp turmeric powder
1/8 tsp cumin seed
2 tbsp corn flour
Salt to taste
Curry leaves
Oil for frying
Method
Put cooked rice in a bowl.
Add the chopped capsicum, beans, onion, mashed potato, grated carrot, curry leaves, ginger and garlic to the bowl.
Then add the cumin seed, corn flour, chilli powder, turmeric powder and salt to the bowl and mix well.
Crush the vegetable rice mix in a blender. Don't make it a fine paste.
Let it sit for 5 minutes. Heat oil in a pan. Add a spoonful of batter into the hot oil. Fry over medium flame until both sides are golden brown.
Move the cutlets into a tissue paper to remove excess oil.
Serve warm with sauce.
