Vegetable Semolina Upma

Semolina Upma is a famous healthy Indian breakfast, fortified with vegetables. It is quick and very easy to make and is served hot with coconut chutney or pickle.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 - 5 servings

Ingredients
1 cup Semolina
1 finely chopped carrot (medium sized)
1 finely chopped onion (medium sized)
½ cup green peas
½ cup finely chopped cauliflower
1 tsp grated ginger
4-5 curry leaves
2-3 green chilies
1/2 tsp cumin seeds
1/2 tsp black gram (urad dal)
1/2 tsp split Bengal gram (chana dal)
1/2 tsp mustard seeds
1 tsp oil (you may substitute it with 1 tsp ghee for better flavor)
Salt to taste

Method
  • Roast the semolina for 2-3 minutes till it turns light golden brown in color.

  • In a pan, add 1 tsp of oil. Once it is hot, add split bengal gram, black gram, mustard seeds, green chilies, curry leaves & ginger and stir it for 2-3 minutes.

  • Add all the chopped vegetables and sauté until half cooked (you can add vegetables of your own choice).

  • Now add Semolina and mix it well with the half cooked vegetables

  • Add 2 cups of water and salt as per taste.The ratio of the quantity of semolina to water should be 1:2.

  • Cook it on a low flame and stir it occasionally to ensure that it does not stick on to the pan.

  • The dish to now ready to be served hot with pickle or coconut chutney.
