Vegetarian Bean Taco Mix

This taco mix will feed a family and is a great way to have a meat-free night (it came about when my family realised just how much meat we were eating).

It can also be used the following day in wraps for lunch, and If you leave out the onion, it doesn't need to be cooked at all.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: Enough for a family meal

Ingredients
1 400g can of corn kernals
2 400g cans of red kidney beans
1 large onion
Tomato paste
Mexican chili powder
Olive oil (for cooking)



Method
  • Heat a large pan to a low-medium heat.

  • Dice the onion.

  • Cook the onion until softened.



  • Drain the corn and add it to the pan. Allow it to cook for a few minutes while you drain and rinse the beans (I like my corn a bit sweetened).



  • Add the kidney beans.



  • Mix in a few large tablespoons of tomato paste.



  • Add the Mexican chilli powder (to taste).

  • Serve in hard or soft tacos with your choice of toppings.

  • Dont foget the simple mix can be used as a base for wraps
