Vegetarian Beancurd Black Fungus
A simple Chinese vegetarian dish of black fungus and beancurd knots simmered in fermented beancurd stock.

Makes: 4 servings
Ingredients
10 dried black fungus
12 dried beancurd knots
1 tbsp preserved beancurd
50ml vegetable stock
Method
Soak black fungus in a bowl of water for 10 minutes. Drain and roughly chopped into bite-size pieces.
Soak the dried beancurd knots in another bowl of water until soft. Drain.
Heat the fermented beancurd in a pot with 50ml of vegetable stock. Add in the black fungus and beancurd knots. Cover and cook for 10 minutes until soft.
Remove from the heat, transfer to a serving dish and serve.
