Vegetarian Breakfast Burritos
This popular dish can be found on most American breakfast menus and for good reason! It is hearty, satisfying and ever so flavoursome. Add fillings to suit your mood. This is equally delicious when filled with bacon, mushrooms and even leftover roasted vegetables.
Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 3 burritos
Ingredients
6 eggs
¼ capsicum
¼ onion
½ cup of grated tasty cheese
1 tablespoon olive oil
1 teaspoon of butter
salt and pepper
3 white wraps
salsa to garnish
sour cream
Method
Finely chop onion and capsicum.
Sauté onion and capsicum in a little butter and olive oil. Allow to cook on low until onion is soft.
Whisk eggs and add to pan. Season with salt and pepper.
Keep mixing as eggs cook. When eggs are almost cooked through add tasty cheese and turn off the heat.
Assemble on wrap.
Top with sour cream and salsa to serve.
