Vegetarian Couscous
Perfect dish for a light lunch or as an accompaniment to fish or chicken.
Preparation Time: 12 minutes
Cooking Time: 10 minutes
Makes: 4-6 servings
Ingredients
1/2 cup olive oil
3 cloves garlic
1 small eggplant, sliced
100g green beans
1 zucchini, sliced
1 bok choy
Salt
Freshly ground pepper
2 cups instant couscous
2 cups boiling water
3 ripe tomatoes, chopped
2 tablespoons fresh coriander
Method
Step 1
Heat 3 tablespoons of olive oil over medium heat. Add the garlic, beans, eggplant, zucchini and saute until tender. Add bok choy and cook a further 3 minutes Season with salt and pepper.
Step 2
Place couscous in a bowl, pour in boiling water and 1 tablespoon of oil. Mix well and let stand for several minutes. Separate the grains with a fork.
Step 3
Place tomatoes in a bowl and season with salt and pepper. Add in 2 tablespoons of oil.
Step 4
Mix tomatoes and coriander into the couscous.
Step 5
Add cooked vegetables to the mix. Drizzle with remaining oil and season to taste.
