Vegetarian Dumpling Delights
These veggie dumplings aren't just all vegetables. They contained a mixed of enoki and shiitaki mushrooms; garlic chives and healthy buckwheat soba noodles.
They are vegan-friendly and it takes only five to six minutes to achieve that golden pan-fry perfection.
Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 4-6 servings
Ingredients
1 packet of wonton wrappers
1 bunch of enoki mushroom
150g garlic chives
150g cooked soba noodles
100g shiitaki mushrooms
30ml sesame oil
30ml soy sauce
100g mini vine capsicum
50g green shallots
50ml cooking oil
Salt and pepper to season
Method
Finely chop the mini capsicum, enoki mushroom, shiitaki mushroom, cooked soba noodles and garlic chives into small piece.
Heat a small amount of oil in a pan.
Lightly sauteed the capsicum, shiitaki mushroom and garlic chives.
Remove from the pan.
Put chopped soba noodles, enoki mushrooms, sauteed garlic chives and shiitaki mushrooms in a large mixing bowl.
Season with salt, pepper, sesame oil and light soy sauce.
Mixed well to combine.
Remove excess moisture.
Place a small teaspoonful of filling on a wonton wrapper.
Fold the wonton wrapper into a triangle.
Pick up both ends and fold them together at he front to form a ball-like shape. Think of it like folding your arms.
Continue the process with all wrappers.
Heat some oil in a fry pan on medium heat.
Place dumplings in the pan.
Shallow pan fry until golden and crispy.
Pan fry the rest of the dumpling patch.
Arrange 6-7 dumplings per plate.
Place the sauteed mini vine capsicum at the center.
Garnish with thinly sliced shallots.
Serve hot.
Watch them disappear in minutes.
Ah-ha, I saved my share, to enjoy them with a nice crisp white wine.
