Vegetarian Fried Rice

Super easy and super tasty, this recipe is a great way to use up leftovers. Rice especially is best from the day before as it is dry!



Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 6-8 servings

Ingredients
2 cups basmati rice, cooked according to pack instructions
1 brown onion
3 eggs lightly whisked
1 cup sweet corn
1 cup green beans
1 carrot
1 pack of tofu
1/2 cup green shallots, sliced diagonally

Dressing
1/4 cup sesame oil
1 tsp ginger, finely chopped
3 garlic cloves, crushed
1 tsp sugar
2 tbsp rice vinegar
1 tbsp oyster sauce
1/3 cup soy sauce
1 tbsp veg stock powder

Method
  • Finely dice the onion, carrot, green beans, and tofu.



  • Throw the vegetables and tofu into a heated wok with the sesame oil, ginger and garlic. Toss for a few minutes until slightly softened.



  • Add the cooked rice to your wok and stir.

  • Combine the remaining dressing ingredients into a bowl before adding to the wok. Drizzle carefully all over the rice and mix well.

  • Create a well in the rice and pour in the whisked eggs. Mix gently in a small circle until eggs are semi-cooked. Combine with the rest of the rice
