Vegetarian Gnocchi with Spinach and Three Cheese Sauce
Who needs meat when you can make a vegetarian dish like this that tastes so good. If you are a cheese lover as I am, this recipe is for you!
I used fresh spinach as have it growing in the garden, however you could use frozen as long as you squeeze out the excess water after defrosting it.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 4
Ingredients
500 g instant gnocchi
250 g spinach
250 g Mascarpone cheese
60 g strong cheese, grated
Pinch of ground nutmeg
3 tbsp Parmesan cheese, freshly grated
Method
Boil the gnocchi as per packet instructions in boiling salted water. Drain.
Microwave the spinach for about a minute and chop roughly.
Stir the spinach into the cooked gnocchi - I did it directly into the Corning ware bowl that I was using to heat it up.
Add the Mascarpone and cheese and a little ground nutmeg.
Stir gently until it is creamy and add some pepper.
Preheat a grill, and grill for about 6 minutes or until it is golden and bubbling.
Serve - can be re-heated.
