Vegetarian Indonesian Fried Rice

This is a really popular dish in Indonesia. Normally, pieces of chicken are added, but this vegetarian option tastes just as good!



Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 2 servings

Ingredients
2 cups rice
1 zucchini, halved and quartered
2-3 carrots
1 onion
2 garlic cloves
2 tbsp sweet soya sauce
2 tbsp salty soy sauce
2 tbsp ketchup
1 stock cube
Salt and pepper

Method
  • Dice the onions and finely chop the garlic cloves.
  • Brown them in a pan with oil.
  • Measure out the rice and rinse with cold water. Top up the rice with fresh water and allow it to boil on high heat. Once boiling, turn the heat down.
  • Chop the carrots into small matchstick-sized pieces.



  • Mix the zucchini and carrots with the fried onion and garlic. Allow the vegetables to soften, stirring them occasionally.



  • Once the vegetables are cooked, stir in the chickpeas.
  • Crush up the stock cube and stir in.



  • Add the spices and sauce to the vegetables and mix thoroughly.
  • Drain the rice and mix into the vegetables then serve.

  • This is one of my favourite foods of all times
