Vegetarian Indonesian Fried Rice
This is a really popular dish in Indonesia. Normally, pieces of chicken are added, but this vegetarian option tastes just as good!
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 2 servings
Ingredients
2 cups rice
1 zucchini, halved and quartered
2-3 carrots
1 onion
2 garlic cloves
2 tbsp sweet soya sauce
2 tbsp salty soy sauce
2 tbsp ketchup
1 stock cube
Salt and pepper
Method
Dice the onions and finely chop the garlic cloves.
Brown them in a pan with oil.
Measure out the rice and rinse with cold water. Top up the rice with fresh water and allow it to boil on high heat. Once boiling, turn the heat down.
Chop the carrots into small matchstick-sized pieces.
Mix the zucchini and carrots with the fried onion and garlic. Allow the vegetables to soften, stirring them occasionally.
Once the vegetables are cooked, stir in the chickpeas.
Crush up the stock cube and stir in.
Add the spices and sauce to the vegetables and mix thoroughly.
Drain the rice and mix into the vegetables then serve.
