Vegetarian Nachos
Simple healthy treat a great entree or snack at a party or afternoon treat.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 3- 4 servings
Ingredients
2 packets corn chips
11/2 cups grated cheese
sour cream
1 tin refried beans
1 jar salsa or nacho's sauce
2 avocado's
lemon juice
1 clove garlic
1/2 lebanese cucumber
Method
Arrange corn chips on a tray, sprinkle with cheese and place in a moderate oven til cheese is melted (turn the heat up for the last 2 minutes to brown cheese)
Peel avocado's, chop garlic and mash together.
Squeeze juice of a lemon into avocado dip and add sliced cucumber.
Add a little water to the pot (to stop beans from sticking) and spoon the refried beans in and heat up a (aprox 3 minutes). Stir.
Take the corn chips out of oven and arrange on a plate along with salsa, beans, avocado and sour cream.
