This is an amazing recipe as it tastes very much like pate, yet it is vegetarian and therefore has no meat in it!
Easy to make, you will have your visitors guessing as to what is in it!
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Serves: About 1½ cups
Ingredients
1 tbsp olive oil
1 medium onion, sliced thinly
About 250 g mushrooms, sliced
2 eggs, hard boiled
½ cup walnuts, plus a few for garnish
Marsala or wine, optional
Method
Heat some of the oil in a fry pan or wok, and add the onion slices and some salt.

Cut the onions into thin slices
Cook for about 10 minutes until the onions are soft, stirring regularly.
Turn down the heat and cook for about 25 more minutes, or until the onions are caramelised - make sure you stir and if they start to burn, add some Marsala or water, or even a bit more olive oil.
Add another ½ tbsp of oil, and cook the mushrooms for about 10 minutes until they are soft but not going "mushy".
Allow this mixture to cool.
Put the onions, boiled eggs, and walnuts into a food processor
Pulse until the mixture is combined, and is the same texture as a pate.
Add some salt and pepper to taste.
Put in the fridge for about an hour, garnish with walnuts, and serve.
I had this with my chicken enichiladas and again for lunch and snacks on crackers.
Also great as an entre, and you can make it ahead of time.
