Vegetarian Sausage Stew

Sausage stew is my favourite hearty meal. This recipe uses a newly-found vegan sausage that I'm delighted to say works a treat in this recipe.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Ingredients
Meat free 'bacon' wrapped sausages
2 onions
3 garlic cloves
A few sprigs of parsley
1tsp garam masala
1 tblsp mixed spice
Black pepper
A few chilli flakes
1 tin of tomatoes
2 carrots
2 parsnips
1 sweet potato
1 maris piper potato
1 tblsp philadelphia
Top leaves of pak choi


Method
  • Chop the onions and garlic and add to a frying pan on a medium heat with a splash of olive oil for 5 minutes. After they have softened somewhat add the sausages and seasoning and stir for 10 minutes. Keep the heat at medium to high to low, you want the sausages browned, but remember this is a stew.

  • While the sausages are cooking chop the potatoes, carrot, and parsnip and add to a saucepan f 2 pint of water. Bring to the boil and keep boiling for 15 minutes.



  • Add the chopped tomatoes to the pan of sausages then chop the seasoning and add to a frying pan.





  • Turn to the stew to a simmer and cover for 15 minutes.

  • While the sausage stew is reducing add pak choi and the philadelphia to the vegetable mash.



  • Leave the stew and vegetable mash to reduce for a further 5 minutes. Then the stew should look like this:



  • Dinner is done. Chow down on those sausages and relish the fact that you don't miss meat.
