Vegetarian Sushi

This sushi recipe is easy to prepare with ingredients already in the pantry. It is perfect for a snack or for lunch and it tastes even more delicious served with some Japanese soy sauce, picked ginger and wasabi.

Preparation Time: 20 minutes
Cooking Time: 0 minutes
Makes: 6 servings

1x packet sushi seaweed
2 cups of cooked sushi rice
3x carrot, skin peeled and grated
1x avocado, skin peeled and sliced
1x packet enoki mushroom, cooked
1x fried tofu, cooked
1x capsicum, sliced lengthways
1x cucumber, sliced lengthways

Lay one piece of sushi seaweed on the sushi bamboo mat.
Cover half of the sushi seaweed with a thin layer of rice.

Line avocado, cucumber, capsicum and carrots on top of the rice.

Add mushrooms and tofu on top of the vegetables.

Start by folding the bamboo mat over the sushi, ensuring the ingredients are tucked inside the sushi.

As you roll the sushi, ensure you roll and squeeze the sushi tightly as well as pulling the bamboo mat out from underneath the sushi.

Once you have completed rolling the sushi, wet the end of the sushi seaweed with water so it will stick. If the sides are a bit loose, you can just add rice to the side.
Use a sharp knife and cut the sushi into pieces.

Complete all steps until all ingredients are used up.
