Veggie Spaghetti

Use your favourite vegetables to create a wonderful veggie spaghetti that your family will love.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 6

Ingredients
1 x 500 g packet dried spaghetti
2 zucchini, diced
3 tomatoes, diced
1 small red capsicum, sliced
1/2 onion, diced
1/2 cup water
lemon juice
1 tsp olive oil
salt and pepper

Method
  • Cook the pasta according to packet directions and drain.

  • Meanwhile, in a large saucepan, heat oil to medium and gently cook the zucchini, tomatoes, capsicum and onion until the onion is cooked.

  • Add half a cup of water and let simmer until the liquid has halved.

  • Add the spaghetti to the vegetables and mix until combined.
  • Add lemon juice, salt and pepper, mix to combine. Taste and add more lemon, salt or pepper if needed.
  • Serve with a sprinkle of parmesan cheese.
