Vermicelli and Sago pudding with Saffron

A popular dessert in southern India. It is a traditional sweet served on any occasion and goes by the name 'Payasam'. A meal isn't usually complete without this pudding. Quite easy to make, the recipe is from my granny. She was an expert cook and every time I make this dish, it reminds me of her warm smile and love for us.

Also the saffron used in the dish, is high in iron. This is a great way to increase your iron intake. You can replace the sugar in the recipe with sugar free. You can also replace milk with sweetened condensed milk. If you are using condensed milk, make sugar or sugar free to be 1/2 cup.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 8 servings

1 cup vermicelli
1/2 cup sago
1 1/2 cup of water to boil vermicelli
1 cup full cream milk
1 cup sugar
4-5 saffron twigs
1/2 cup cashews
1 tbsp Ghee
3 cardamom pods

Soak the sago in water for 2-3 hours.

Roast the vermicelli in a dry pan until it becomes golden brown.

Fried Vermicelli

In a pan, bring some water to the boil and add the soaked sago to cook. The sago is cooked when it turns from white to being transparent.

: Cooking Sago

In a seperate pan, bring the 1 and half cups of water to the boil, add cardamom and the roasted vermicelli. When the vermicelli is cooked, add the cooked sago.

Now add milk and sugar to this mixture and simmer for 5 mins.

While the milk condenses, add the saffron sprigs to the pudding and mix well.
In a seperate pan, add 1 tbsp of Ghee.
After it is hot, add the cashews and roast well. You can also add sultanas. Keep the flame on medium while roasting the cashews as they will quickly turn brown.

Add the roasted cashews at the end to the pudding and mix well.

Sever hot or cold and garnish with some more saffron sprigs.
