Vermicelli Sevia Vegetable Upma

Vermicelli Upma is a popular South Indian breakfast, fortified with vegetables and is a very healthy option. The kids too would love it as the dish resembles noodles.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4 - 5 servings

Ingredients

1 cup vermicelli
1 finely chopped carrot (medium sized)
1 finely chopped onion (medium sized)
1 finely chopped potato (medium sized)
1 tsp grated ginger
1/4 cup roasted peanuts
4-5 curry leaves
2-3 red chilies (you may substitute the red chillies with green chillies)
1/2 tsp cumin seeds
1/2 tsp black gram (urad dal)
1/2 tsp split Bengal gram (chana dal)
1/2 tsp mustard seeds
1 tsp oil (you may substitute it with 1 tsp ghee for better flavor)
Salt to taste

Method

  • Roast the vermicelli for 3-4 minutes till it turns golden brown in color.

  • In a pan, add 1 tsp of oil. Once it is hot, add split bengal gram, black gram, mustard seeds, red chilies, curry leaves & ginger and stir it for 2-3minutes.

  • Add all the chopped vegetables and sauté until half cooked.

  • Add 2 cups of water and salt as per taste.
  • When the water starts boiling, add the roasted vermicelli in it. The ratio of the quantity of vermicelli to water should be 1:2.

  • Cook it on a low flame and stir it occasionally to ensure that it does not stick on to the pan.

  • The dish to now ready to be served hot with pickle or sauce.
