Versatile Banana Bread
Tired of looking for a banana bread recipe that not only melts in your mouth, but is versatile enough to be able to add in extra ingredients? Look no further. Not only can this banana bread be plain, it can also be made with whatever mix-in you desire. I prefer it with peanut butter cups.
Preparation Time: 20 minutes
Cooking Time: 55 minutes
Serves: 8
Ingredients
1 3/4 cup all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 cup of softened butter
3/4 cup of sugar
2 bananas (3 if ripe)
2 eggs
1 tsp vanilla
1/4 cup of milk
1/4 cup of vanilla yogurt
1 cup preferred mix-in
1/3 cup preferred mix-in for topping
Method
In a large mixing bowl, mix all dry ingredients.
In a small mixing bowl, mash the bananas to the preferred consistency.
Mix together all wet ingredients, including the butter and mashed bananas with the dry ingredients until creamy.
Fold in 1 cup of the preferred mix-ins.
In a 9 inch bread pan, coat the inside with butter, and then flour, to stop the bread from sticking after being baked. Tap the edges of the pan to get rid of excess flour.
Pour the batter into the bread pan and sprinkle 1/3 cup of the preferred mix-in over the top.
Bake for 55 minutes, or until golden brown, and use a toothpick to make sure it has been cooked all the way through.
Cool for 10 minutes before serving. Best served warm.
