Very Easy Mushroom Soup

Sometimes when life gets hectic, it's nice to have homemade food but very easy recipes are required. This mushroom soup is one of my favourites as it means hardly any effort for a lot of flavour!

Preparation Time: 5 minutes
Cooking Time: 1 hour on hob or 3 hours slow cooker
Makes: 4 servings

450g Mushrooms
400g tin of French Onion Soup
0.5l stock

Only 3 ingredients!

Wipe the mushrooms clean and chop roughly.
Put all the ingredients in a large pan. For the stock, you can use any kind you have available but I prefer beef bone broth as made according to Nanna Banner's recipe. Most French Onion Soups are made with beef broth, so the flavours will work well together.

For hob cooking, bring to the boil then simmer for 1 hour.
For slow cooking, cook on low for 3 hours.
Blend until velvety smooth.

It is now ready to serve and enjoy!

If you have some extra time, then before serving, add a third of a tin of coconut milk (mix well after opening the tin) and the freshly-squeezed juice of one lime.

Optional ingredients

Stir well and heat gently.
Serve with hot buttered toast or garlic bread.
