Very Veggie Chicken

I call this very veggie chicken because you can easily add more vegetables, add a vegetable-rich salad, and this dish would still taste great. It's a perfect mid-week meal that is healthy, filling, and satisfying.

Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 3 servings

Ingredients
2 onions
2 red peppers
3 chicken breast fillets
Handful of spinach
Tin of tomatoes
Thyme
Garlic
Rosemary
Paprika
Tumeric
Black pepper
1 vegetable stock cube

Method
  • Fry the onions and pepper together in a medium deep frying pan with a splash of olive oil for 7 minutes/until softened.

  • Add the chicken, seasoning and turn the heat up to sear the chicken. Once browned all over turn the heat down and add the tin of tomatoes .

  • Put the stock cube in a pint of water and add to the pan. Turn the heat to a simmer and cover for 30 minutes.



  • Feel free to make a salad, or rice with this dish, or even some pita bread to mop up the lovely sauce. I add a handful of spinach for the last 2 minutes of cooking, however, and it wilts all over it and makes a yummy, healthy dinner.
