A quick & easy stir-fried dish of chicken with juicy sweet & sour pineapple and crispy roasted cashew nuts. It's a colourful dish with a delicious combined taste of sweet, sour and salty.

Makes: 4 servings
Ingredients
1/2 cup raw cashew nuts
2 tbsp oil
4 garlic cloves, finely chopped
1 onion, cut into large chunks
2 red chillies, chopped
350g boneless, skinless chicken thighs, chopped
1 red capsicum, chopped
1 green capsicum, chopped
2 tbsp oyster sauce
1 tbsp fish sauce
1 tsp sugar
2 cups chopped fresh pineapple
Method
Roast the cashews on an oven tray for about 15 minutes in a moderate 180C oven, until deep golden. Allow to cool.
Heat the oil in a pan and stir-fry the garlic, onion and chilli over medium heat for 2 minutes; remove from the pan.
Increase the heat to high and stir-fry the chicken and capsicum, in 2 batches, tossing until the chicken is light brown.
Return the onion and chilli to the pan, add the oyster sauce, fish sauce, sugar and pineapple and toss for 2 minutes to heat through.
Toss the cashews through.
Transfer to a serving dish and serve immediately.
