Vietnamese Fried Rice

If you have some left over rice and don't know what to do with it then fried rice is the perfect solution. Simple and versatile, this Vietnamese recipe makes use of the ingredients you have sitting in your kitchen and turns them into a tasty meal in just a few minutes.



This recipe is very easy and especially versatile since you can modify it, adding anything you like to make your own personal stir fry. While simple, the dish is popular because the recipe can be changed to satisfy everyone, from a busy person who just needs a quick meal to the most picky taste buds.

Ingredients
2 cups of cooked rice
1 capsicum
1 egg
1 small carrot
1 handful of beans
1 handful of baby corns
Salt
Vinegar
Chilli
Soy sauce

Method

  • Wash the ingredients, dice the carrot into small cubes and cut the capsicum into thin strips.



  • Mix the rice with raw egg. If you want to use newly cooked rice then the rice should be left until cold. The rice used in this recipe should contain less moisture than normal to create the perfect fried rice.



  • Use a spoon to mix the spices with the rice for an even taste.

  • Heat up oil in a cooking pan. Put the carrot and baby corns in and stir slowly. Add beans and capsicums. Stir until they are cooked. Season with the spices to suit your taste.



  • Fry the rice. Mix rice with other ingredients and stir so that they mix evenly.
