Wafu Spaghetti Carbonara

Wafu means Japanese style. If you have never tried Japanese pasta before, try this creamy chicken & mushroom carbonara with a fusion twist!



Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
4 chicken thigh fillets, diced
500g button mushroom, peeled and quartered
6 cloves garlic, finely diced
2 cubes vegetable stock
2 tablespoons butter
600ml cooking cream
2 tablespoon Japanese mayonnaise
500g spaghetti
salt and freshly ground black pepper, to taste
nori slices, to serve

Method
  • In a stockpot, cook spaghetti in salted boiling water until al dente. Drain and set aside.
  • Melt the butter in a large saucepan and add in the diced garlic.



  • Add in the chicken pieces and cook until they turn white.



  • Add in the mushroom and vegetable stock cubes. Mix well.



  • Pour in the cream and mayonnaise. Bring to the boil and mix well. Season with salt and black pepper.



  • Add in the cooked spaghetti and mix to combine.



  • Spoon to a plate and top with nori slices. Serve immediately.
