Walnut Banana Bread
Walnuts and bananas are a match made in heaven, combine them when baking and you have a walnutty banana bread. Tuck in nut lovers.
Preparation Time: 5 minutes
Cooking Time: 35 minutes
Makes: 8/10 servings
Ingredients
150g Spelt flour
100g Coconut oil
10 Walnuts
50g Agave syrup
1 tsp Chia seeds
2 eggs
3 very ripe bananas
Method
Place the eggs, coconut oil, chia seeds and syrup in a bowl and whisk with either a hand held whisk or fork.
Chia seeds
Mash the bananas in a seperate bowl and add to the mixture. Don't worry if it looks lumpy, it turns out yummy with gooey banana pieces in the loaf.
Banana loaf mixture
Add the walnuts and flour and fold into the mixture. I like to keep half whole, and break the remaining walnuts.

Pour the mixture into a loaf tin.

Put in the oven for 35 minutes at 180 degrees/ gas mark 4.
This produces an incredibly moist, and moreish loaf, be warned it is addictive.
