Get some baking done during this holiday season with this sweet bread. This is similar to a cinnamon roll but shaped into a wreath for a Christmasy feeling. This bread is filled with sweet cinnamon spices and walnuts, with a crunchy crust and dusted with icing sugar. It will make a lovely centerpiece on a Christmas table and is perfectly suited to share.
Ingredients For the dough:
2 cups Plain flour, sifted
1 cup Wholemeal flour, sifted
1 sachet (7g) of dry yeast
1 teaspoon ground cardamom
1/2 teaspoon salt
1/4 cup white sugar
1 large egg
155 ml lukewarm milk
55 grams melted butter
For the filling:
55 butter, room temperature
1/2 cup brown sugar
1 tablespoon ground cinnamon
100 grams, walnuts, finely chopped
For egg wash:
1 large egg, slighted beated
Brown sugar, for sprinkling
For the dough, mix all dry ingredients together(i.e both flour, yeast, cardamon, salt and sugar) and all the wet ingredients (i.e egg, butter and milk).
Attach stand mixer with a dough hook attachment and knead on low for about 5 minutes until dough comes together smooth and elastic.
Form dough into a ball and place into a lightly oiled bowl in a warm area and let to rise for about 1 hour.
Once dough has doubled in volume, punch down the dough and flatten into a rectangular shape. Roll to make a 12 by 18 inch rectangle.
Make filling by mixing butter, cinnamon and sugar. Spread the filling over the dough, leaving a 1/2 inch border around all edges. Sprinkle with the chopped walnuts evenly and press onto the dough slightly.
Starting with the long ends, roll the dough tightly into a log. Cut ends if uneven.
Form log into a ring shape, pinching open end and covering with any off cuts.
With a pair of scissors, cut into the dough 2/3 of the way.
Carefully twist each segments facing up.
Let to rise for another 30-45 minutes.
Preheat oven at 180 degrees C, fan-forced
Brush with egg wash and sprinkle with sugar.
Bake for 25 minutes until golden. Remove from oven and let cool.
Dust with icing sugar and serve.
To make it extra special, top with some red and green glace cherries.
