Walnut Loaf Cake

If you are a fan of not so sweet treats to go with your coffee, this walnut loaf cake is right down your alley. It’s tasty, moist and crunchy at the same time.

Preparation Time: 15 minutes
Cooking Time: 35 minutes
Serves: 5

Ingredients
5 medium eggs
125g of plain yogurt
80ml of sunflower seed oil
100g of brown sugar
A pinch of salt
280g of white flour or whole wheat (I used whole wheat)
1 sachet of baking powder (2 teaspoons)
Butter or oil to grease the loaf pan
1 big handful of walnuts, chopped

Method
  • Prepare 2 bowls. Crack the eggs. In one of the bowls add the yolks, in the other the whites. Add a pinch of salt where the whites are and start beating them until soft peaks appear. At this stage, add the sugar in two stages. Mix again.

  • Add the yolk and mix again. Now, add the yogurt and the oil. Mix mix mix.

  • Lastly, add the flour mixed with the baking powder. Pour it slowly into the bowl, mixing at the same time on low speed.



  • Meanwhile, preheat the oven to 190*C. Grease the loaf pan with one teaspoon of oil or butter and spread it evenly on the bottom and sides.
  • Pour in the batter and sprinkle the walnuts on top of the cake. Be generous with the walnuts because they’ll add a nice crunch to the cake. You can also sprinkle some brown sugar on top along with the walnuts.



  • Bake for 35-40 minutes, until golden on top and till a toothpick inserted into the middle comes out clean.Let the cake rest for a few minutes in the pan before taking it out. Serve it with a good cup of tea or coffee, but mostly coffee.
