Warm Bacon and Avocado Salad
Here's an idea for spring greens, which I find are tricky vegetable to find recipes for. This is a warm salad - the spring greens are wilted and the dressing is a reduction of balsamic vinegar and some butter.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings
Ingredients
90g (or thereabouts) packet of bacon lardons
Two large handful of spring greens (about 3 or 4 leaves per person)
2 avocados
2 tbsp balsamic vinegar
20g butter
Method
Fry the bacon lardons in a large wok or frying pan. You will only need a very small amount of oil, as they will release their own fat. Cook until the edges start to brown.
Cut the central stalks out of the spring greens, roll up and cut into thin slices. Drop into the pan with the bacon lardons and cook for a few minutes until they start to wilt.
Add the balsamic vinegar and cook for a few minutes to reduce the vinegar to a syrupy consistency.
Add the butter to the pan and let it melt and coat the spring greens.
Cut the avocado into chunks.
Pop the spring greens and bacon into a serving bowl, and then sprinkle the avocado chunks over the top.
