Warm Bacon and Avocado Salad

Here's an idea for spring greens, which I find are tricky vegetable to find recipes for. This is a warm salad - the spring greens are wilted and the dressing is a reduction of balsamic vinegar and some butter.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
90g (or thereabouts) packet of bacon lardons
Two large handful of spring greens (about 3 or 4 leaves per person)
2 avocados
2 tbsp balsamic vinegar
20g butter



Method
  • Fry the bacon lardons in a large wok or frying pan. You will only need a very small amount of oil, as they will release their own fat. Cook until the edges start to brown.



  • Cut the central stalks out of the spring greens, roll up and cut into thin slices. Drop into the pan with the bacon lardons and cook for a few minutes until they start to wilt.



  • Add the balsamic vinegar and cook for a few minutes to reduce the vinegar to a syrupy consistency.
  • Add the butter to the pan and let it melt and coat the spring greens.
  • Cut the avocado into chunks.
  • Pop the spring greens and bacon into a serving bowl, and then sprinkle the avocado chunks over the top.
