Warm Chorizo And Olives With Red Onion Jam
How good is chorizo sausage, smokey with a bit of bite and a great fat content. To compliment these characteristics this recipe adds a sweet and sour onion jam along with the salty/bitter olives.
Easily served on a plate this dish will disappear quickly. Simply eaten with a toothpick or place some on a crouton/cracker with a spread of Danish feta.

Cooking Time: 8 minutes
Makes: 4 -8 servings
Ingredients
1 Chorizo sausage (best quality you can find)
1/2 red onion
10 -15 pitted kalamata or quality black olives
2 tsp olive oil
2 tbsp. brown sugar
1 1/2 tbsp sherry vinegar
Method
Sliced the olives, onions and chorizo.
Place the oil and onions in a pan and place on the stove.
When the onions start to fry place the chorizo in the pan. When the chorizo is crisp turn over and crisp the other side.
Remove the chorizo from the pan once both sides are crisp. Add the sugar and vinegar to the pan and reduce slightly until the onions are soft.
Return the chorizo to the pan with the olives, toss through the onions and serve immediately.
