Warm Pear and Walnut Caesar Salad

I wanted something slightly different to an ordinary Caesar salad so decided to use pears!

Pears are very versatile in that they go well with many savoury foods and this recipe is no exception.

I ate it with my home made filo pastry spinach and cheese coils, however, it could be a meal on it's own.

This is the fourth in my Mix N Match recipes and great for people who live alone and do not want the same meal every day but also do not want to cook every day.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 6 servings

Ingredients
50 g walnut pieces
Bit of butter
1 tbsp oil
3 - 4 firm pears
Cos lettuce
Few slices of bread for croutons
80 - 90 g Blue cheese, crumbled
30 g Parmesan, shaved
3 anchovies (optional)

For the dressing
¼ cup olive oil
1 tbsp mayonnaise
½ tbsp dijon mustard
1 clove garlic, crushed
Bit of grated Parmesan cheese
1 tbsp lemon juice
1 tsp Worcestershire sauce

Method
  • Firstly make the croutons by cutting the bread up into about 3 cm pieces and quickly frying in some butter.

  • Bake them in the oven, on baking paper, for about 15 minutes or until they are crisp.

  • I actually had some bought croutons left from something else and these were nowhere near as nice as the ones I usually make myself!

  • Make the dressing by mixing the ingredients together, and keep it till you are ready to serve.

  • Put the walnuts in a non stick pan and fry them without oil for about 2 minutes or until they are lightly toasted.


  • Chop and core the pears using either an apple slicer, or cut them into quarters.

  • Heat the oil and butter in the pan and add the pears. Fry them for 2 - 4 minutes or until they start to turn golden.

  • Take them out with a slotted spoon.

  • If the lettuce is whole, break it up into smaller pieces and put in a large bowl, and add the walnuts.


  • Add the pears, croutons, shaved Parmesan and the crumbled blue cheese.


  • Just before serving, add the salad dressing and toss lightly - or if you want to keep the salad leftovers for the next day, serve the dressing on the side in a bowl.

  • I had the salad with my spinach and two cheese coils.
