Warm Stilton Salad

With some leftover stilton cheese that needed eating, I was wondering what I could make with it. Then when my mum mentioned that it would go well with walnuts, I delved into my nut supply and started planning my lunch dish. In the end I came up with a delicious warm stilton salad with mixed nuts, veg and bacon, If you're vegetarian, simply omit the bacon or swap it for some halloumi. Based on the brands I used, each portion is about 179 calories.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
5 round lettuce leaves
20g spinach
20g walnut pieces
20g pecans
40g stilton cheese
30g red pepper
40g tinned sweetcorn
40g sun dried tomatoes in olive oil
120g tinned peeled new potatoes
2 rashers WeightWatchers back bacon
1/2 tsp dried rosemary

Method



  • Line a salad bowl with the lettuce leaves.



  • Scatter the spinach on top.



  • Grate the stilton and sprinkle over the walnuts.



  • Toast the walnuts under the grill for about five minutes.



  • Place the cheesy walnuts on top of the spinach.



  • Chop the red pepper and potatoes, and mix with sweetcorn.



  • Pour over the sun dried tomatoes along with the olive oil, then sprinkle with rosemary.



  • Grill for about seven minutes.



  • Layer the potato mix over the walnuts.



  • Grill the bacon for five minutes on each side, then cut into strips.



  • Scatter the bacon over the salad.
