Warm Tomato Medley

Grilled tomato and cheese toasties are a match made in heaven, this is the grown up, open version.



Preparation Time: 3 minutes
Cooking Time: 10 minutes
Makes: 1 servings



Ingredients
2 slices of walnut sourdough
10 medley tomatoes
20 grams goats cheese
1 tsp olive oil
Handful or flat leaf parsley
Salt and pepper


Method
  • Heat oil in a pot on a medium heat, you don't want the tomatoes to fry just slowly warm.

  • Score the tomatoes so that they won't burst and are easy to squish. Add to the pot.


  • Wash and chop the handful of parsley.


  • Add the parsley to the warm tomatoes and stir.


  • The tomatoes should be soft now, give them a slight squish to release some of the seeds.


  • Toast the bread and start to plate.


  • Tumble the tomatoes and parsley on to the toast.


  • Crumble the goats cheese over the top.


  • Season to taste.
