Makes: 2 servings
Ingredients
5oz dried puy lentils
3/4 pint vegetable stock
3 tomatoes, skinned and chopped
1 x onion, peeled and chopped
1 x large handful green beans, topped and tailed
1tbsp olive oil
1 x red or green pepper, chopped
1 x clove garlic, peeled
1 small nugget of fresh ginger (2-3cms square)
1 x handful fresh herbs of your choice
1 tbsp balsamic vinegar
Method
Put the lentils in a saucepan
Pour over the stock and simmer until the stock is absorbed (about 30 mins)
If the stock boils away too quickly then top up with water
Heat the oil in a large wok
Crush the garlic into the onion then add the green beans and the pepper
Heat for a few minutes until cooked but slightly al dente
Add the tomatoes, vinegar and giner and season to taste
Cook until all veg is hot
When the lentils are cooked, pour into the wok with the other veg
Stir in the herbs and serve with green salad leaves
